This banana and blueberry breakfast parfait is a quick and easy make-ahead breakfast. Tastes delicious, looks impressive, yet is ready in minutes.

Shake yourself out of your breakfast routine with this blueberry and banana breakfast parfait.

Layers of fresh fruit, yoghurt and a crunchy granola topping, makes for a tasty and healthy breakfast that you can make the night before.

It's also easy to adapt to your personal taste and to use whatever fruit or other ingredients you have available.

And it's so hard on a school day to find the time to make anything very exciting.

I do make porridge most days, because Little S loves it, but I often fancy something a little lighter.

How pretty does this breakfast parfait look?

It's such a treat to have something like this for breakfast. And even better it can be made the night before - cutting down the work in the morning.

If you decide to make your parfait the night before just leave off the granola. Add this just before serving to avoid it going soggy.

What is a parfait?

While a traditional parfait is semi-frozen dessert made from eggs, cream and sugar, a parfait can also be a layered yoghurt-based dish.

It can be served as a dessert as I've done with this strawberry yoghurt parfait or for breakfast.

The yoghurt is served in layers with fruit and granola and is an extremely versatile breakfast that goes well with any kind of fruit.

Scale up for a larger family

The recipe below makes two small breakfast parfaits.

However, it can easily be scaled up or down, depending on how many people you are feeding.

Ingredients

To make this breakfast parfait you will need:

  • banana
  • blueberries
  • granola
  • yoghurt.

Banana and blueberry breakfast parfait

This banana and blueberry breakfast parfait is the quickest and easiest make ahead breakfast I've ever come across. It looks really impressive yet takes literally minutes to prepare. Easily adapted for vegans.

Ingredients
 
 

  • 1 banana sliced
  • 100 g blueberries
  • handful granola
  • 250 g plain yoghurt dairy free or your choice

Instructions
 

  • Place a couple of spoonfuls of yoghurt in the bottom of a glass or small trifle dish.
  • Cover with a layer of bananas, blueberries and granola.
  • Add more yoghurt and then another layer of bananas and blueberries.
  • Finish with a final layer of granola. If making the night before I would recommend adding the granola to the top in the morning, just before you serve.
