Peanut butter and blueberry cookies

Hands up if you're a peanut butter lover! These vegan peanut butter and blueberry cookies are as easy to make as they are moreish.

These peanut butter cookies went down a storm with the kids. 

They contain no flour, no eggs and no dairy. In fact these peanut butter oatmeal cookies contain just five ingredients:

  • peanut butter
  • banana
  • blueberries
  • oats
  • maple syrup.

These are common store cupboard ingredients that I usually have at home anyway. They make lovely oaty breakfast cookies, they're great for after school snacks and they are brilliant in lunchboxes - check your school's nut policy first though.

How long does it take to make peanut butter banana cookies?

It takes no more than ten minutes to make these peanut butter banana oatmeal cookies. 

First up you need to mash the banana really well.

Secondly stir in the peanut butter and the maple syrup.

Next add the oats.

Finally stir in the blueberries.

Dollop spoonfuls of the blueberry, banana, oatmeal and peanut butter mix onto a prepared baking tray. Bake in a preheated oven for 20-25 minutes and you're done.

Could you substitute the peanut butter for other nut butters?

Absolutely you could. Cashew butter and almond butter both work really well and you'll end up a different flavour completely.

Unfortunately sunflower seed butter isn't a great substitution as it goes green when cooked! Read more about my experiments with sunflower seed baking on my gingerbread chickpea blondies recipe.

You could also substitute the blueberries in these peanut butter cookies for chocolate chips or raisins if you wished. If you do use raisins be sure to push them well into the cookies before baking to prevent burning.

Ingredients
 
 

  • 3 medium ripe bananas
  • 3 tablespoons peanut butter
  • 3 tablespoons maple syrup
  • 120 g oats
  • 50 g blueberries

Instructions
 

  • Pre-heat the oven to 200°C/180°C (fan)/gas mark 6.
  • Line a baking tray with greaseproof baking paper.
  • Peel and mash the 3 ripe bananas in a mixing bowl.
  • Add 3 tablespoons peanut butter and 3 tablespoons maple syrup and stir.
  • Stir in 120g oats.
  • Fold in 50g blueberries
  • Spoon onto the baking tray so you have ten similarly sized cookies. Press the blueberries into the cookie mixture.
  • Bake for 20-25 minutes until golden brown on top. Allow to cool on a wire rack.
