Can you make delicious pancakes without eggs? Yes! These eggless pancakes are really easy to make and taste amazing. They can be made with or without blueberries and are suitable for vegans.

These vegan blueberry pancakes are made without eggs and they’re one of our favourite recipes to enjoy as a family.

I often make them on weekend mornings and get the kids to help me.

As long as you use plant based milk like oat or almond milk, they’re suitable for vegans as well. Using bicarbonate of soda with a little apple cider vinegar or lemon juice helps them to rise, so you won’t miss the eggs.

How difficult are eggless pancakes to make?

They’re pretty easy to make, certainly no more difficult than making classic pancakes that use eggs.

It’s simply a case of mixing the dry ingredients and wet ingredients together separately, then whisking them together slowly until you have a batter.

Once the batter is ready you fry them over a low-medium heat until turning brown, before flipping to cook the other side.

What should you serve with these pancakes?

You can serve your favourite pancake toppings with these egg free pancakes.

I like to make a berry compote to serve with mine. Here are some other ideas:

  • chia jam
  • maple syrup
  • cinnamon syrup
  • nut butter
  • yoghurt
  • fresh fruit
  • granola

What ingredients do you need to make eggless pancakes?

You will need the following ingredients to make vegan blueberry pancakes:

  • 300g plain flour
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • 1 tablespoon sugar, optional
  • 400ml milk
  • 1 tablespoon apple cider vinegar or lemon juice
  • Handful of frozen or fresh blueberries, optional 
  • Sunflower oil for frying

Can you freeze eggless pancakes?

Yes, these freeze really well. Place them in the freezer on a tray for 30 minutes before transferring to a freezer bag or box - this stops them from sticking together.

Alternatively you could place a piece of baking paper between each one. 

I like to reheat from frozen in the toaster but you could also heat in the microwave.

Ingredients
 
 

  • 400 ml milk I use oat milk
  • 1 tablespoon apple cider vinegar or lemon juice*
  • 300 g plain flour
  • 1 tablespoon caster sugar optional
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • Handful frozen or fresh blueberries optional
  • Sunflower or coconut oil for frying

Instructions
 

  • Put 400ml milk in a jug and add 1 tablespoon cider vinegar or lemon juice. Mix together and set aside.
  • Put 300g plain flour, 1 tablespoon sugar (if using), 1 teaspoon baking powder and ½ teaspoon bicarbonate of soda in a mixing bowl and whisk together.
  • Pour the milk into the flour whisking as you go.
  • Add a handful of blueberries if using and stir in.
  • Heat a little sunflower oil in a pan. Turn the heat to medium and add a spoonful of batter. You can do 2-3 at a time depending on the size of the pan. You don’t want them to stick together though so start with less.
  • Cook for 3 minutes then turn with a spatula and cook the other side.
  • Repeat with the rest of the batter. Makes about 8 pancakes.
