As delicious as a classic apricot crumble, this recipe is gluten free and vegan. This gluten free crumble can be made with tinned or fresh apricots.
Crumble is definitely my kids favourite dessert.
It's delicious whatever fruit you add, you can use a range of flours for the topping and you can add in nutritious extras like oats or chopped nuts.
This crumble recipe is gluten free. I made it using the The Free From Fairy* gluten free flour blend, which is packed full of nutritious ingredients.
Whether you're gluten free or not I would recommend it to anyone as a way to eat a variety of different grains - the flour includes teff, sorghum and buckwheat as well as tapioca and potato starch.
Equipment
You will need:
- a sharp knife (to chop the apricots)
- a chopping board
- weighing scales (I prefer digital)
- mixing bowl
- wooden spoon
- medium oven proof dish

- Apricots
You can use fresh when they're in season or tinned when they're not. - Plain flour
I used a gluten free flour blend. - Dairy free block butter
I like Naturli vegan block butter. You can make this with the type of spread that comes in a tub but I find the block butter is easier to rub in to the flour for the crumble topping. - Light brown sugar
I have kept the quantity quite small as the fruit is sweet enough for my children. If you're looking for a refined sugar free crumble try my healthy apple crumble with maple topping. It can also be made with gluten free flour. - Oats
I often add oats to my crumble topping for some extra texture and nutrition. Buy gluten free oats if needed. You can also use chopped nuts or seeds instead if you prefer.
What to serve with crumble
Crumble is delicious served with custard, cream or ice cream.
There are excellent dairy free versions of all of these on the market now. I like Oatly vegan cream and custard and we usually buy Swedish Glace vanilla ice cream.

Crumble is great for making with kids
This is a great recipe to make with kids as well. Miss R, 4, de-stoned and chopped all the apricots and helped me to rub the flour and butter together to make the topping.
She loves cooking so much and always wants to help. I hope this love of cooking lasts her whole life.

When her daughter was diagnosed with Coeliac Disease Vicki from The Free From Fairy* was unhappy with the gluten free flours on the market.

Make ahead
You can make the crumble and the topping ahead of time.
If making more than an hour or two in advance I would recommend storing both the prepared apricots and the crumble topping separately in the fridge and then assembling when ready to cook.
Storage
If you have leftover crumble you can store it in the fridge when cool. Reheat until piping hot in the microwave or oven. Alternatively you can enjoy it cold.
Freezing
Crumble topping freezes very well. I often make double the amount needed for a recipe and freeze the rest for the future.
You can freeze this crumble either cooked or uncooked. However, the crumble topping can seep into the fruit and go a bit soggy so where possible I recommend freezing the fruit and the topping separately.

How to make gluten free apricot crumble
- Preheat the oven to 180°C (fan)/200°C/gas mark 6.
- If your apricots are fresh cut them into quarters, removing the stones as you go. For tinned apricots, drain them and cut into quarters.
- Place 500g prepared apricots in a baking dish.
- Rub together 110g plain gluten free flour and 75g dairy free butter with your fingertips until you have the consistency of breadcrumbs.
- Stir through 50g light brown soft sugar and 40g oats.
- Pour over the top of the apricots.
- Bake in the oven for 30-40 minutes until golden brown.

Sounds like a great flour - I totally agree with you that we should try and eat a wide variety of foods and I often find 'gluten free' things actually taste nicer and more interesting than stuff made with boring old refined white flour! And huge kudos to Vicki for making her own solution to a problem - that is truly awesome! My dream would be to create a healthy food outlet in all motorway service stations - but I fear it may take 'slightly' more capital than I currently have!! 😉 This sounds like a fab crumble. My favourite crumble ever is peach crumble made with oats, but I'm not sure I've ever made an apricot crumble - no idea why not! I shall have to rectify that! Eb x
