Carrots and peanut butter work so well together

Who'd have thought that carrots and peanut butter makes an absolutely brilliant snack? My kids love apple and pear slices dipped in peanut butter but until now I've never served this up.

The perfect snack for International Carrot Day

Tomorrow, 4 April, is International Carrot Day. In order to celebrate I've collaborated with SKIPPY® Peanut Butter to bring you this delicious, tasty vegan snack idea.

Why are carrots good for you?

When I was a kid my Grandad, who was a greengrocer, always used to tell me to eat my carrots because they would help me to see in the dark.

I can't now remember how much I believed him but I have always liked carrots and perhaps his early encouragement helped with this.

There might just be a little bit of truth in some of those old wives' tales however. Carrots, like all vegetables, are packed full of nutrients. In particular they have lots of vitamin A, which is essential for good vision.

What is SKIPPY® Peanut Butter

How to make carrots and peanut butter

For full recipe, ingredients and quantities go to the printable recipe card at the end of this post.

It's really very simple to make this carrot and peanut butter snack. You simply need to peel and cut your carrots up into batons. I've used my crinkle cutter to make them more interesting to the kids.

Then transfer some of the peanut butter from the jar into a bowl and serve on a board or plate with the carrot sticks.

Ingredients
 
 

  • 4 medium carrots peeled
  • ½ jar SKIPPY® Peanut Butter

Instructions
 

  • Cut the carrots into batons. I used a crinkle cutter for mine.
  • Place the peanut butter in a small bowl. 
  • Serve the carrot sticks and peanut butter together. Dip the carrot sticks into the peanut butter and use them to scoop it up. Enjoy!

    Delicious, but my kids refuse to eat it. They said they would like it if there were more ingredients.
    Any other ingredients I can add to make my kids like it?

    The crinkle cuts look fun! I like carrots dipped in tahini so I can imagine in Peanut butter is just as good!

      Ah that's a shame. I tried a brand of soya peanut butter that was nut free recently - it was actually pretty good!

    Love the simplicity of this recipe Mandy. It sounds a lot healthier than peanut butter on toast, which is what I usually have.

    Okay - so I'm trying this tomorrow. I've never even considered this combination, but the smooth peanut butter texture and the crisp carrot sounds tasty.

    I think carrots and peanut butter go really well together and although I've used peanut butter to make a satay style dip I've never used it just by itself! It's something I'll have to try.
