Spicy sweet potato wedges

A delicious and easy recipe for spicy oven-baked sweet potato wedges. These go brilliantly with veggie burgers and are dangerously moreish!

Ingredients
 
 

  • 1 large sweet potato
  • 1 tablespoon olive oil
  • 1 tablespoon harissa paste or 1 teaspoon smoked paprika*
  • salt and pepper optional

Instructions
 

  • Preheat the oven to 200°C (fan)/220°C/gas mark 6. Lightly grease two non-stick baking trays.
  • Wash the potatoes (you don't need to peel them unless you want to) then slice into wedge shapes. 
  • Place in a large bowl, add 1 tablespoon olive oil and 1 tablespoon harissa paste and mix well. Season with salt and pepper if wanted.
  • Put the wedges on the baking trays and roast for 30-40 minutes, turning halfway, or until soft on the inside and crispy on the outside.

Notes

  1. *See note above about spice levels if serving to children. Smoked paprika is less spicy than harissa paste but will still give your wedges a great flavour.
