Simple tomato sauce for pasta

Everyone needs a good recipe for simple tomato sauce for pasta - this is mine. Made with fresh tomatoes and perfect for summer.

Ingredients
 
 

  • 1 kg ripe tomatoes roughly chopped (this is roughly 12 medium tomatoes)
  • 1 lemon juiced
  • 2 tablespoons finely chopped basil
  • 2 tablespoons olive oil
  • 2 cloves of garlic finely chopped
  • 1 tablespoon balsamic vinegar optional

Instructions
 

  • Put all the ingredients into a large pan, bring to the boil and simmer for 20-30 minutes with the lid on.
  • Remove the lid, give everything a good stir, and cook for a further 20 minutes, leaving the lid off, until the sauce has thickened.
  • Add salt and pepper to taste.
  • You can enjoy this sauce as it is or blend for a smoother result if preferred.
