A quick and easy recipe for healthier chocolate rice krispie nests without golden syrup. A fun recipe to make with the kids for Easter or at any time of year. Gluten free and can easily be dairy free and vegan.
2tablespoonsmaple syrup or agave syrup or honey (if not vegan)
2tablespoonsbutter or dairy free spread
75gpuffed brown rice*
50graisins or cranberries or other dried fruits
Instructions
Place 15 fairy cake cases on a board or plate.
Melt 200g dark chocolate in a bain marie* or in the microwave.
When it's almost melted add 2 tablespoons maple syrup and 2 tablespoons butter or dairy free alternative and continue heating until combined. Try not to stir too much.
Carefully remove from the heat and stir in 75g puffed rice and 50g dried fruit. Mix until everything is coated with chocolate.
Spoon the mixture into the fairy cake cases, pressing down with the back of a teaspoon.
If you are making these into nests make a well in the centre and push the rice mixture to the sides.
Allow to set in the fridge for 30 minutes
Decorate with chocolate eggs, marshmallows or chicks as you wish.
Store in the fridge.

Notes
Puffed brown rice is available from large supermarkets, whole food stores or online.
To melt your chocolate break it up and place in a heatproof bowl. Place over a saucepan filled with about 4cm boiling water. Heat until the chocolate is melted. You can also melt chocolate in the microwave. Read more about melting chocolate.
