Easy blueberry compote

This quick and easy blueberry compote is made using frozen blueberries and chia seeds to thicken it up. The chia seeds made it into a thicker, spreadable consistency so it works well as a healthier alternative to jam as well. No added sugar.

Ingredients
  

  • 400 g frozen blueberries
  • 1 tablespoon water
  • 1 tablespoon chia seeds
  • 1 tablespoon lemon juice

Instructions
 

  • Place 400g blueberries into a medium saucepan over a medium heat. Add a tablespoon of water to stop them from sticking, stir well and cover with a lid.
  • Cook for 5-10 minutes, stirring occasionally, until defrosted.
  • Remove the lid and continue to cook for 1-2 minutes.
  • Stir through a tablespoon of chia seeds and a tablespoon of lemon juice.
  • Remove from the heat and set aside to thicken. As it cools it will thicken more.
  • Once completely cool store in an airtight container in the fridge for up to five days

Notes
