Delicious carrot cake energy balls that are packed full of nutritious ingredients. Perfect for lunch boxes.

Ingredients
 
 

  • 150 g dates* or prunes, chopped
  • 100 g sunflower seeds or pumpkin seeds or a mix
  • 1 tablespoon hemp seeds optional
  • 1 medium carrot finely grated
  • 1 teaspoon ground cinnamon

Instructions
 

  • Place 100g seeds and 1 tablespoon hemp hearts (if using) into your food processor. Pulse until broken down.
  • Add 150g chopped dates (or prunes), a grated carrot and 1 teaspoon ground cinnamon.
  • Pulse again until well combined.
  • With lightly oiled hands roll the mixture into balls.
  • For best results chill in the fridge for 30 minutes.
  • Store in the fridge or freeze*.

Notes

  2. Can be frozen. Freeze on a tray for an hour first to stop them sticking together or place a little baking paper between each one.
