Delicious carrot cake energy balls that are packed full of nutritious ingredients. Perfect for lunch boxes.

- 150 g dates* or prunes, chopped
- 100 g sunflower seeds or pumpkin seeds or a mix
- 1 tablespoon hemp seeds optional
- 1 medium carrot finely grated
- 1 teaspoon ground cinnamon
Place 100g seeds and 1 tablespoon hemp hearts (if using) into your food processor. Pulse until broken down.
Add 150g chopped dates (or prunes), a grated carrot and 1 teaspoon ground cinnamon.
Pulse again until well combined.
With lightly oiled hands roll the mixture into balls.
For best results chill in the fridge for 30 minutes.
Store in the fridge or freeze*.
