Wholemeal carrot soda bread rolls

Need a healthy bread roll in a hurry? Try these wholemeal carrot soda bread rolls. They take just ten minutes to prepare and bake in half an hour. Delicious with soup.

Ingredients
 
 

  • 500 g wholemeal flour
  • 1 level tsp bicarbonate of soda (baking soda)
  • Pinch salt optional
  • 300 ml plain unsweetened yoghurt or vegan alternative
  • 200 ml milk or vegan alternative
  • 2 medium carrots  grated

Instructions
 

  • Pre-heat the oven to 180°C (fan)/200°C/400°F/gas mark 6. Cover a baking sheet with non-stick baking paper.
  • Place 500g wholemeal flour, 1 level teaspoon bicarbonate of soda (baking soda) and a pinch of salt into a mixing bowl. Whisk to combine.
  • Stir through 2 grated carrots.
  • In a jug or separate mixing bowl beat together 300ml plain yoghurt with 200ml milk.
  • Stir the yoghurt mixture through the flour until combined.
  • Make eight small rolls with lightly floured hands and place on the prepared baking tray. Bake in the oven or 30 minutes or until golden brown and cooked through.
  • Serve warm or allow to cool completely and store in an airtight container.
