Fancy pizza but no time to make dough? This easy puff pastry pizza recipe is what you need. Simple to make and quick to cook it's a hit with the whole family.
For the tomato sauce (alternatively use ready made)
1tablespoonolive oil
1small onionfinely chopped
2clovesgarliccrushed
400gtinned chopped tomatoes
1tablespoontomato purée
dashbalsamic vinegar
½lemonjuiced
1teaspoondried oregano
Instructions
For the tomato sauce
Heat a tablespoon olive oil over a medium heat in a small saucepan. Add the chopped onion, stir and reduce the heat to low. Cover and sweat for 8-10 minutes, stirring occasionally, until completely soft.
Remove the lid, add the garlic and cook for a further minute. Add the chopped tomatoes, 1 tablespoon tomato purée, a dash of balsamic vinegar, the juice of half a lemon and a teaspoon of dried oregano.
Bring to the boil and then reduce the heat to low and allow to simmer for anything up to one hour until the sauce has thickened. Don't worry if you don't have an hour - a few minutes will be fine.
Allow the sauce to cool a little then blend with a handheld blender until smooth.
To make the puff pastry pizza
Preheat the oven to 180°C(fan)/200°C/gas mark 6.
Unroll the puff pastry and place on a baking tray. Prick a few times with a fork and score a border around the edge, about 1cm from the outside.
Spread inside the border with the tomato sauce*.
Sprinkle over the grated cheese and finally sprinkle over a teaspoon of dried oregano.
Bake in the oven for 15-20 minutes until golden brown and bubbling.
Allow to cool on a wire rack and then cut into eight slices.
Notes
*You won't need all of the tomato sauce. Store leftovers in the fridge or freezer to use at a later date.
