These vegan peanut butter and blueberry cookies are easy to make and extremely moreish.

Ingredients
 
 

  • 3 medium ripe bananas
  • 3 tablespoons peanut butter
  • 3 tablespoons maple syrup
  • 120 g oats
  • 50 g blueberries

Instructions
 

  • Pre-heat the oven to 200°C/180°C (fan)/gas mark 6.
  • Line a baking tray with greaseproof baking paper.
  • Peel and mash the 3 ripe bananas in a mixing bowl.
  • Add 3 tablespoons peanut butter and 3 tablespoons maple syrup and stir.
  • Stir in 120g oats.
  • Fold in 50g blueberries
  • Spoon onto the baking tray so you have ten similarly sized cookies. Press the blueberries into the cookie mixture.
  • Bake for 20-25 minutes until golden brown on top. Allow to cool on a wire rack.
