Peanut butter cookies with banana and raspberry
These vegan peanut butter cookies are made with banana and blueberries. They're easy to make and extremely moreish.
- 3 medium ripe bananas
- 3 tbsp peanut butter
- 3 tbsp maple syrup
- 120 g oats
- 50 g blueberries
Pre-heat the oven to 200°C/180°C (fan)/gas mark 6.
Line a baking tray with greaseproof baking paper.
Mash the bananas in a mixing bowl. Add the peanut butter and maple syrup and stir.
Stir in the oats.
Fold in the blueberries
Spoon onto the baking tray so you have ten similarly sized cookies. Press the blueberries into the cookie mixture.
Bake for 20-25 minutes until golden brown on top. Allow to cool on a wire rack.
