Wholemeal carrot soda bread rolls

  • 500 g wholemeal flour
  • 1 level tsp bicarbonate of soda
  • Pinch salt optional
  • 300 ml plain unsweetened yoghurt
  • 200 ml milk
  • 2 medium carrots  grated

  1. Pre-heat the oven to 180°C (fan)/200°C/gas mark 6. Cover a baking sheet with non-stick baking paper.
  2. Place the flour, bicarbonate of soda and salt into a mixing bowl. Whisk to combine.
  3. Stir through the grated carrots.
  4. In a jug or separate mixing bowl beat together the yoghurt and milk.
  5. Stir the yoghurt mixture through the flour until combined.
  6. Use your hands to make eight small rolls and place on the prepared baking tray. Bake in the oven or 30 minutes or until golden brown and cooked through.
  7. Serve warm or allow to cool completely and store in an airtight container.
