Simple tomato sauce for pasta

Everyone needs a good recipe for simple tomato sauce for pasta - this is mine. Made with fresh tomatoes and perfect for summer.

Ingredients

  • 1 kg ripe tomatoes roughly chopped (this is roughly 12 medium tomatoes)
  • 1 lemon juiced
  • 2 tbsp finely chopped basil
  • 2 tbsp olive oil
  • 2 cloves of garlic finely chopped
  • 1 tbsp balsamic vinegar optional

Instructions

  1. Put all the ingredients into a large pan, bring to the boil and simmer for 20-30 minutes with the lid on.
  2. Remove the lid, give everything a good stir, and cook for a further 20 minutes, leaving the lid off, until the sauce has thickened.
  3. Add salt and pepper to taste.
  4. You can enjoy this sauce as it is or blend for a smoother result if preferred.
