Ingredients

  • 1 large sweet potato
  • 1 tbsp olive oil
  • 1 tbsp harissa paste or 1 tsp smoked paprika*
  • salt and pepper optional

Instructions

  1. Preheat the oven to 200°C (fan)/220°C/gas mark 6. Lightly grease two non-stick baking trays.

  2. Wash the potatoes (you don't need to peel them unless you want to) then slice into wedge shapes.

  3. Place in a large bowl, add 1 tbsp olive oil and 1 tbsp harissa paste and mix well. Season with salt and pepper if wanted.

  4. Put the wedges on the baking trays and roast for 30-40 minutes, turning halfway, or until soft on the inside and crispy on the outside.

Recipe Notes

*See note above about spice levels if serving to children. Smoked paprika is less spicy than harissa paste but will still give your wedges a great flavour.
