Simple stir fry with spiralised zucchini or courgette noodles

If you're looking for a simple healthy stir fry recipe that you can knock up in minutes then this courgette noodles stir fry is for you. It's perfect for vegans, a meal on a 5:2 fast day or simply increasing your veg intake for the day.

  • A handful of frozen peas
  • A handful of frozen green beans
  • 1 tbsp pure sesame oil
  • 1 courgette (zucchini) spiralised (peel it if you have kids who object to the green skin)
  • 1 tbsp soy sauce
  • 1 tbsp sesame seeds


  1. Blanch the peas and green beans by cooking in boiling water for two minutes, then placing in iced water or running under the cold tap to refresh.
  2. Heat the sesame oil in a non-stick wok or frying pan.

  3. Add the courgette noodles and stir fry for a couple of minutes. Add the peas and beans, the soy sauce and the sesame seeds.

  4. Stir fry for a further minute or two until everything is well combined and hot. Serve immediately.
