Place 100g mixed nuts in a food processor and pulse until you have the consistency of breadcrumbs.
Add 150g chopped apricots, 50g raisins and 1 tbsp maple or agave syrup (if using). Continue to process until the mixture comes together in a sticky lump.
With lightly oiled hands roll small amounts of the mixture into balls. Put in the fridge for 30 minutes before serving.
Store in an airtight container in the fridge.
