Potato and quinoa veggie burger

This vegan quinoa burger recipe with potatoes, herbs and spices is our new favourite dinner. It's quick to make, tastes great and is so easy that the kids can even make their own.

  • 25 g each black and white quinoa (or use all white) cooked and drained
  • 2 medium floury white potatoes peeled and cooked
  • 1 onion peeled and chopped
  • 15 ml vegetable oil
  • 1 small bunch freshly mixed herbs (thyme, parsley, rosemary and sage)
  • 20 g cornflour
  • Pinch salt and pepper
  • 10 g ground madras curry powder
  • 5 g vegetable stock powder

To serve

  • 2 gherkins sliced
  • 2 ripe tomatoes sliced
  • slaw
  • 4 burger buns


  1. Pre-heat the oven to 180°C.

  2. Heat up the oil in a large sauté pan and soften the chopped onion. When cooked put into a large bowl.

  3. Add the cooked quinoa grains and add the cooked potato.

  4. Chop the herbs finely and add the remaining ingredients, mix everything well and work into a firm dough.

  5. Form the dough into burgers or balls and press flat gently. Put the burgers on a baking sheet covered with baking paper and bake in the preheated oven at 180°C for 15-20 minutes.

  6. Cut the burger buns in half and warm through under the grill.

  7. Load up your burgers with gherkins, tomato slices and slaw, pop on the top of the bun and put a pick in it to hold it all together.
