Put 400ml milk in a jug and add 1 tbsp cider vinegar or lemon juice. Mix together and set aside.
Put 300g plain flour, 1 tbsp sugar (if using), 1 tsp baking powder and ½ tsp bicarbonate of soda in a mixing bowl and whisk together.
Pour the milk into the flour whisking as you go.
Add a handful of blueberries if using and stir in.
Heat a little sunflower oil in a pan. Turn the heat to medium and add a spoonful of batter. You can do 2-3 at a time depending on the size of the pan. You don’t want them to stick together though so start with less.
Cook for 3 minutes then turn with a spatula and cook the other side.
Repeat with the rest of the batter. Makes about 8 pancakes.
*this is to react with the bicarbonate and help it to rise
