From spinach to beetroot and butternut squash to courgette, adding vegetables to your pancakes is an easy way to increase the veg in your diet. Whether you're looking for hidden vegetable recipes for fussy toddlers or simply want to eat more vegetables you'll find vegetable pancakes here for all occasions.

As a parent of a fussy toddler parents were a lifesaver.
When he stopped eating all fruit and veg (yes really) at the age of 18 months pancakes were one of the only ways that I could get a portion of fruit or veg into his diet.
They're brilliant for babies, can be used in lunch boxes and even frozen and reheated at a later date.
If you're not already making pancakes for your kids, now is the time to start.
Fruits are good in pancakes too
Fruits work well to sweeten pancakes and add some nutrition too - try apple purée, banana, raspberries and blueberries.
But vegetables work just as well in pancakes
In the vegetable pancakes recipes below I have used spinach, beetroot, sweet potato and courgette to add vitamins, nutrients, fibre and also colour to pancakes.
Some of these recipes are sweet, some are savoury and some work well either way.
