What is your favourite pancake recipe? I am yet to meet a pancake that I don’t love. Ever since my son stopped eating fruit and veg at the age of 18 months (he’s now almost 8) I have found pancakes to be a great way to get a portion of fruit or veg into his diet. Apple purée, banana, raspberries, blueberries – lots of fruits work perfectly in pancakes, both to sweeten them naturally and to add in some extra nutrition. But vegetables work just as well.
