They're ready in under 30 minutes, can be batch cooked and frozen and are great for popping in lunchboxes.
There are just so many occasions when sweet potato fritters are the perfect recipe to make. We love them when:
- the cupboards are a little bare - these fritters made with one sweet potato and store cupboard ingredients
- you have a sweet potato that needs eating up
- the lunchboxes for the week need some veg added
- a quick lunch is needed
- we fancy a burger but want something healthier.
Sweet potato fritters are great for lunch
If you're looking for a quick and easy veggie lunch that packs in the veggies then look no further.
These sweet potato fritters are just what you need.
Made from a simple mix of grated sweet potato, gram flour (chickpea flour), spices and water, these don't take long to put together.
They can be eaten straight away with mayo or hummus or served as part of a mezze style lunch with salads, dips and veggies.
They're also great for dinner
We had these sweet potato fritters for dinner the other day with steamed carrots and broccoli, patatas bravas, salad and hummus.
Serving meals like this - I like to call it family style - with several dishes on the table that everyone can help themselves from - is really helping us with picky eating. It just takes away a lot of the stress of mealtimes - try it if you haven't already.
They can also be served as burgers - simply pop them in a burger bun with some salad and ketchup.
Suitable for vegans
These sweet potato fritters are free from dairy, eggs and other animal products making them suitable for vegans.
Chickpea flour (also known as gram flour) is a great source of plant-based protein. It's worth adding it to your diet if you haven't already.
What is gram flour?
Made from dried chickpeas, gram flour is a fine, yellow flour. Indian cooks make pakoras with gram flour. There are several varieties so you might see it called besan or chickpea flour too. For this recipe you can use any kind of chickpea flour.
It works well as a binding agent, making it a great vegan ingredient. Use it instead of eggs to make vegan sweet potato fritters recipe.
Other countries also use chickpea flour. Italy and France make thin chickpea flour pancakes called farinata or socca. Argentine pizzerias often have faina on the menu - a thicker chickpea flour pancake.

Sweet potato fritters ingredients

To make these sweet potato fritters you will need the following ingredients:
- 1 medium sweet potato
- 120g chickpea flour
- ½ teaspoon baking powder
- 1 teaspoon ground cumin
- Salt and pepper
- Water
- 1 tablespoon parsley
- Sunflower oil for frying
Storage
Store leftover fritters in the fridge for up to three days or freeze in a freezer proof container for up to six months. I recommend flash freezing (freeze on a tray) for an hour before transferring to your container. This will avoid the fritters sticking together once frozen.
How to make vegan sweet potato fritters
The key to making vegan fritters is to use gram flour, which helps to bind them together when mixed with water. It can be lumpy though so sift or whisk it first.

Sweet potato fritters
Ingredients
- 1 medium sweet potato (around 330g), grated
- 120 g chickpea flour (gram flour) sifted
- ½ teaspoon baking powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 160 ml water
- 1 tablespoon parsley chopped
- Sunflower oil for frying
Instructions
- Mix all the ingredients, apart from the oil, together in a mixing bowl and season to taste.
- Heat a little oil in a frying pan over a low heat and add a tablespoon of the mixture. Flatten down with a fork and repeat with one or two more tablespoons depending on the size of your pan. Cook for 2-3 minutes.
- Turn with a spatula and cook on the other side. Press down gently on the top of the fritters with the spatula to check that no liquid batter squirts out. If it does you need to keep cooking for a little longer.
- Drain on kitchen paper and serve immediately with dips and salads.
Notes
- Nutritional information is approximate and is intended as a guide only. In this recipe it does not include the sunflower oil, which is used for frying the fritters.
