While my kids definitely prefer regular noodles, these spiralised noodles were enjoyed for their novelty value alone!
This is a great easy stir fry recipe
This stir fry with courgette noodles takes just a few minutes to prepare and cook.
There's a good chance you have most of the ingredients in your store cupboard and freezer. And if not, then you can easily adapt it to what you have available.
All I went out to buy was a courgette.
I was really pleased that the kids both tried these zoodles. When I told them they were spiralised courgettes they were really quite excited!
This stir fry would be lovely with broccoli as well or any other vegetables you usually stir fry.
What are courgette noodles?
Courgette noodles are sometimes called courgetti or zoodles. They are simply a courgette that has been pushed through a spiraliser. This turns them into noodles.
Zoodles are so versatile and can be eaten raw in a salad or cooked in any recipe where you'd use spaghetti or noodles.

How to make a simple stir fry with courgette noodles

You will need a spiraliser* to make this recipe.
Simple stir fry with spiralised zucchini or courgette noodles
- A handful of frozen peas
- A handful of frozen green beans
- 1 tbsp pure sesame oil
- 1 courgette (zucchini) spiralised (peel it if you have kids who object to the green skin)
- 1 tbsp soy sauce
- 1 tbsp sesame seeds
- Blanch the peas and green beans by cooking in boiling water for two minutes, then placing in iced water or running under the cold tap to refresh.
- Heat the sesame oil in a non-stick wok or frying pan.
- Add the courgette noodles and stir fry for a couple of minutes. Add the peas and beans, the soy sauce and the sesame seeds.
- Stir fry for a further minute or two until everything is well combined and hot. Serve immediately.
