It never fails to baffle me that with all the many things that my kids refuse to eat, curry generally isn’t one of them. As long as it doesn’t contain too much chilli the Sneaky Veg kids usually tuck into a curry – especially if it contains potato.
In this recipe, made for metro.co.uk, I roast the potato and cauliflower, which gives them a lovely texture and avoids that mushy, overcooked school dinner vibe that often gives cauliflower a bad name. I also blend some spinach into the sauce, adding some extra goodness. I make no claim that this is an authentic Indian aloo gobi (potato and cauliflower in Hindi) but it does taste great!
