Sit either of my children in front of a bowl of crisps and you’re guaranteed peace and quiet until the bowl is empty. Nachos seemed like the perfect way to turn crisp eating into a meal. You never know how new things (and sometimes old offerings) are going to go down in this house but this was pretty much a success. In fact R had a bumper veg eating day because he followed this up by eating two beetroot muffins (recipe coming soon) for pudding. Woo!
Here’s what I did:
Preheated the oven to 200°C.
Put half a bag of tortilla chips (unsalted are best), into a small ovenproof dish, topped it with homemade veggie chilli and guacamole and put grated cheese on half of it. R objects to melted cheese – no idea why.
To make the guacamole I puréed half an avocado with a tiny bit of onion and some lime juice.
Put it in the oven for about ten minutes until the cheese was melted and the chilli was heated through. You could also do this under the grill.
It all got eaten apart from the carrots in the chilli, although both were a bit suspicious of the guacamole. I think I might make this again using a tomato salsa instead of chilli – I’ll let you know how that goes.
I’ll also be posting a veggie chilli recipe soon – R tucked into the kidney beans on his nachos so must build on this small success!
