Have you ever had a macaron? They are gorgeous little French biscuits (although I’m not sure that the word biscuits does them justice!) traditionally made with ground almonds, sugar and egg whites. They are often brightly coloured and beautifully decorated. London-based company Mon Dessert aims to make it easy for everyone to learn to make their own macarons and with their lovely kits anyone can give it a go. My talented friend Samina wants to bring macarons to the world and through her company Mon Dessert she’s making it possible for everyone to learn how to make these delicious delicacies – even those who can’t or choose not to eat eggs. Yes, that’s right, macarons can be vegan too and I promise that you won’t taste the difference.
A couple of weeks ago I went along to learn how to make macarons with Samina and the Mon Dessert team and as well as the traditional egg white variety we made a batch using aquafaba. And what on earth is aquafaba I hear you ask? Well, it is the juice that comes in a tin of chickpeas – or other beans, but chickpeas are the most common. Sounds weird I know but it really, truly works and I guarantee that your macarons won’t taste of pulses!
The Mon Dessert macaron making kits are so beautiful. They make a lovely gift for anyone you know who loves to bake and they can be used time and time again. As well as the ingredients you need (apart from the eggs or aquafaba and the cream) you’ll find inside a re-usable silicone baking sheet, a silicone piping bag and a nozzle. All the ingredients are natural and as far as possible organic. The colour comes from natural sources such as beetroot powder, turmeric and even seaweed rather than artificial food colourings. Each kit costs £39.95 and refills are available for £12 or on a monthly subscription service.
