We love jacket potatoes. They’re a real crowd pleaser and as a family with multiple dietary requirements (vegan, vegetarian, omnivore), we find they’re easy to adapt to everyone’s tastes.
I usually serve my meals family style - meaning that I put everything in the centre of the table. The kids can then help themselves to the bits they fancy.
This jacket potato and chilli meal is perfect for serving family style.
A big hearty mushroom chilli, perfect jacket potatoes served with corn, guacamole and salad - delicious.
Why eat more jacket potatoes?
Jacket potatoes are:
- naturally low in saturated fat, salt and sugars
- low-cost and versatile
- a source of fibre if you eat the skins – which also eliminates food waste
How to cook a jacket potato
We love to cook our jacket potatoes on the barbecue. In fact I don’t think we’ve ever had a barbecue without wrapping up some potatoes and sticking them in the coals. Prefer to oven cook your jacket potato?
How to BBQ a jacket potato
- Cut a cross in the top of the potatoes with a sharp knife.
2. Lightly brush the potatoes with a little olive oil.
3. Wrap in foil.
4. Either: Place in the coals of the barbecue and very carefully check them after 30 minutes. Turn them over if they’re not done or starting to burn on one side.
5. Or place them straight on the grill. They’ll take longer this way - check them after about 45 minutes - but they still turn out perfectly, plus it’s easier to unwrap the foil to check whether they’re done or not.
We prefer to cook them in the coals. They cook quicker, the skin gets crispier and it leaves more space on the grill for the rest of your barbecued treats.
To make your jacket potatoes in the oven
- Preheat the oven to 200°C (fan)/220°C/gas mark 7.
- Cut a cross on the top of the potato.
- For a crispier jacket potato, brush with a little olive oil (optional).
- Place directly on the oven shelf or on a lightly greased baking tray.
- Bake in the oven for around 1 hour until crispy on the outside and soft on the inside.
- NB: The cooking time will vary depending on the size of your potato.
What to serve with jacket potatoes
Jacket potatoes are an excellent meal that the whole family can enjoy. From babies and toddlers to teens and adults, everyone can enjoy this versatile meal.
One of my favourite things about making jacket potatoes is how they’re easily adapted to different family members’ tastes. And a meal with no complaints always keeps me happy!
Here are some of my favourite things to serve with jacket potatoes:
- homemade baked beans
- grated cheese (dairy free for the vegan members of my family)
- veggie chilli
- ratatouille
- grilled corn
- hummus
- a big side salad
Which potatoes are best for baking?
There are several good British varieties of potato for making jacket potatoes.
Look out for Yukon Gold, Maris Piper, King Edward, Shetland Black, Highland Burgundy, Rooster, Arran Victory, Violetta or Mayan Gold for perfect jacket potatoes.
What ingredients do you need for this mushroom chilli recipe?

- Baking potatoes
- Olive oil
- Onion
- Garlic
- Chilli flakes
- Ground cumin
- Ground cinnamon
- Dried oregano
- Tomato purée
- Red pepper
- Mushrooms
- Soya mince
- Kidney beans
- Tinned plum tomatoes
- Salt and pepper
Can you make this mushroom chilli in advance?
Yes. Chilli is the perfect dish to make in advance as the flavours improve if left overnight. Once cooked, allow to cool completely then transfer to an airtight container and store in the fridge for up to three days.
When ready to serve, reheat in a saucepan or in the microwave until piping hot.
Is it freezable?
Yes. Once it’s cooled completely, transfer to a freezer box or bag, leaving a little space at the top for it to expand while freezing. Be sure to label your container with the recipe name and date.
Chill is safe to freeze for 3-6 months. When ready to eat, defrost in the fridge overnight and then reheat until piping hot.

Jacket potato with veggie chilli
Ingredients
For the jacket potato
- 4 large potatoes or 1 per person
- 1 tablespoon olive oil optional
For the mushroom chilli
- 1 tablespoon olive oil
- 1 onion finely chopped
- 3 cloves garlic finely chopped
- ½ teaspoon dried chilli flakes optional
- 2 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon dried oregano
- 1 tablespoon tomato puree
- 1 red pepper diced
- 200 g mushrooms chopped
- 500 g pack soya mince
- 400 g tin of kidney beans drained and rinsed
- 400 g tinned plum tomatoes 1 standard tin
- salt to taste
- black pepper to taste
- handful fresh coriander optional
To serve
- Grilled corn on the cob
- Guacamole
- Sour cream or vegan alternative
- Grated cheese or vegan alternative
- Salad
Instructions
To make your jacket potatoes in the oven
- Preheat the oven to 200°C.
- Cut a cross on the top of the potato.
- For a crispier jacket potato, brush with a little olive oil (optional)
- Bake in the oven for around 1 hour until crispy on the outside and soft on the inside.
To barbecue your jacket potatoes
- Light your barbecue.
- Cut a cross on the top of the potato.
- For a crispier jacket potato, brush with a little olive oil (optional).
- Wrap tightly in foil.
- When the barbecue is hot, either place the potatoes directly in the coals or put them on the grill.
- They will cook a bit quicker in the coals versus the grill. Cooking time depends on the size of the potatoes but check them at 30 minutes in the coals, 45 minutes on the grill. Test them for doneness with a squeeze or seeing whether a skewer goes in smoothly. (Watch out! They will be hot)
To make the vegan mushroom chilli
- Heat the olive oil in a large saucepan with a lid.
- Add your diced onion, stir, reduce the heat to low and cover with a lid.
- Cook for 10-15 minutes until soft, stirring occasionally.
- Add your cloves of chopped garlic, stir, and cook for one or two minutes until softening.
- Add a teaspoon of dried chilli flakes (if using) along with 2 teaspoons ground cumin, 1 teaspoon ground cinnamon and a teaspoon of dried oregano. Stir well and continue cooking for a minute. Stir in a tablespoon of tomato puree.
- Add your chopped red peppers and mushrooms, stir well, cover with a lid and cook for 15-20 minutes until soft.
- Next add the soya mince and cook for a further ten minutes.
- Stir in the tin of plum tomatoes.
- Turn the heat up and stir while breaking up the tomatoes with the back of your spoon. Stir well then add a little cold water if needed to loosen the sauce (you may like to rinse the tomatoes out of the tin with the water - I add around 100ml)
- Add the kidney beans, warm through then season to taste with salt and pepper. Reduce the heat to a simmer until your potatoes are ready.
To serve
- Remove your jacket potatoes from the oven or barbecue.
- Allow to cool slightly, then use your hands to press down on either side of the cross to open the potato. Take care as it will be very hot.
- Spoon over your chilli and serve with your favourite sides, e.g. guacamole, grated cheese or vegan cheese, sour cream and/or corn. Add chopped coriander to the top if desired.
