Sometimes I feel like I must be missing something obvious. Meals that all of the members of my family want to eat are few and far between and I'm constantly on the look out for recipe ideas that mean I only have to cook one meal.
A vegetarian mum, two kids who don't really like vegetables, a toddler who changes his mind almost daily about what he likes/doesn't like... Luckily my husband eats everything (as long as he's got a bottle of hot pepper sauce to hand).
Last week's Cook Blog Share linky had a great selection of different recipes - cakes, desserts, meals and drinks - but it was these five meals that caught my eye as they might just be things that we'd all be prepared to try, eat and maybe even enjoy (if I'm lucky)!
Veggie burritos with halloumi and avocado
My mouth is watering at just the sound of this delicious recipe from Foodie Quine! Miss R would eat the halloumi and Baby S would love the avocado. As for R who knows but I'm definitely going to give this a go.
Potato and kale soup
Green soup would be a bit of a risk with the kids to be honest! But I'm desperate to get them to start eating more than just tomato soup as it's such a convenient meal - not to mention a great way of sneaking in a few portions of vegetables when no-one's looking. This recipe from Searching for Spice sounds delicious and is one that I'll be trying on my little fussy eaters soon.
I have a real weakness for curries with paneer and I remember eating this delicious curry when I was travelling in India. I have no idea why but I've never offered paneer to the children before - I think that's something I have to rectify! This recipe from Herbs, Spices and Tradition looks like a good place to start.
Tomato tart with pesto creme fraiche
I recently convinced the kids to try a tomato pastry tart for the first time by calling it pizza pie. Amazing how important it is to them what something's called! At the moment everyone in the family likes pesto as well so this recipe from A Strong Coffee looks like a good one to try.
Chorizo, cannellini bean and butternut squash stew
I really enjoy this kind of meal and this recipe from Easy Peasy Foodie could be easily adapted to be vegetarian just by leaving out the chorizo and using vegetable stock. Baby S would also enjoy this but the two Rs would find this more of a challenge. They'd eat the mashed potato though!
