Banana bread

A more classic recipe than the no butter banana bread I posted a few weeks ago but equally as good for sneaking in some banana. I've made this many, many times because it always goes down really well here, even when R sees me put the banana in. And it's also really easy which is a bit of a bonus.

110g (4oz) caster sugar
85g (3oz) butter
1 egg
2 large ripe bananas, mashed
225g (8oz) self raising flour
sultanas or blueberries

Pre-heat the oven to 190°C and grease and base line a 9 inch loaf tin. Cream together the butter and sugar. Gradually add the egg and beat well. Beat in the bananas. Sift in the flour and fold in. Add a handful of sultanas or blueberries if desired. Bake for 30-45 minutes until a skewer inserted into the centre comes out clean.
