Usually known as "crunchy bits" in our house my kids love granola. Sadly though, I'm yet to find a recipe that they like as much as the shop bought, sickly sweet variety.

This is my latest attempt, and is based on a recipe from Cook, Eat, Smile by Bill Collison.

2 tbsp honey
1 tbsp vanilla extract
1 tbsp sunflower oil
a generous knob of butter
20g light brown sugar
220g rolled oats
150g chopped almonds (you can use other nuts or a mixture)
200g mixed dried fruit (I used raisins, chopped apricots and chopped dried apple)

Preheat the oven to 120°C/gas mark 1/2.

Put the honey, vanilla extract, oil, butter and sugar in a small pan and gently warm until the honey is runny and the sugar has melted.

Put all the dry ingredients - not including the fruit - in a bowl and add the honey mixture. Stir well to make sure that everything is well coated. Spread over a large baking tray lined with baking paper. Bake for up to an hour, stirring every 15 minutes or so to ensure it browns easily and doesn't stick. Remove from the oven and allow to cool completely before adding the dried fruit.
