The weeks are going so fast this year that I can hardly believe it’s my turn to host Cook Blog Share again! All of a sudden Baby S is walking, starting to say a few words and demonstrate that he has indeed inherited the family temper. He is rapidly turning into a toddler before my eyes.
Anyway, I digress. Here in London early signs of spring are in full flow. It doesn’t really feel like winter really got going this year – although I know that this isn’t true in other parts of the country – and certainly not in the US. A friend of mine has just come back from New York where it was -16! It’s rarely gone below 5 or 6 degrees here for us this winter. Even so the dark evenings, wet afternoons and gloomy days have left me needing hearty, warming meals. I’m still eating vegan 95% of the time so I’ve chosen four lovely vegan hearty meals from last week’s Cook Blog Share as my favourites to share with you all.
I just love this healthy version of the classic Mexican dish. I know baby S would really enjoy eating this meal – definitely one to try.
I am so intrigued by this dish that I’m just going to have to make it soon. I love dumplings but I’ve never tried them with curry flavours like this before.
This sounds like the perfect winter dish – warming and filling. I’m not sure my kids would be quite as keen on this but I’m game for giving it a go! Miss R has tried raw carrots, broccoli, cucumber and cherry tomatoes over the last week and declared she likes them all so maybe butternut squash will be next on the list!
It doesn’t get much heartier than chilli, does it? This is the perfect veggie winter warmer.
