Raw blackberry energy balls

These raw blackberry energy balls are everything you want from a sweet treat - gooey, more-ish and delicious. Even better they're really good for you - with no added sugar and a healthy portion of fruit. They're also vegan, dairy free, egg free etc and make a great after school snack for kids because of the slow-releasing energy produced by the oats.

I made this recipe for the first time with Miss R just after I'd spent a morning cooking with berries in a workshop led by Madeleine Shaw and hosted by Seasonal Berries. This recipe is slightly adapted from Madeleine's.

I've now made it several times as the kids liked it so much. I can't make it with Baby S in the room because he screams until I hand him some straight from the food processor! Even R loves them, and getting him to eat raw fruit is no mean feat.

Ingredients (makes 16)
50g blackberries
10 medjool dates or 175g ordinary dates plus a splash of water
50g desiccated coconut, plus extra for rolling
100g oats (the original recipe calls for 200g but I prefer a stickier texture so I reduced this)
1 vanilla bean, scraped
1 tsp ground cinnamon

Blend the oats in a food processor until they're the consistency of flour. Add the rest of the ingredients and blend until fully combined.

Roll the mixture into 16 balls and roll each ball in desiccated coconut until fully coated.

Freeze for 30 minutes then place in the fridge until you're ready to serve them.
