Four recipes that make veg the hero and #CookBlogShare linky week 49

Once every three weeks I host a linky called CookBlogShare. A linky is a place where bloggers can share their posts and CookBlogShare is a great place to come for recipe inspiration - there is always a really varied selection of recipes to choose from. Last week's linky was hosted by Eb at Easy Peasy Foodie (thanks Eb!) and there were many lovely recipes, especially Christmassy ones.

However, I have decided to choose four recipes to share with you that each make veg the hero. This phrase was used by Vishal from Noon when I visited his factory in west London to see how they produce Indian ready meals for Sainsbury's. The phrase has stuck in my head ever since and I don't think Vishal will mind me using it here.

Without further ado here are four lovely recipes from last week's CookBlogShare that make veg the hero.

These peppers by Recipes Made Easy look delicious. They have anchovies with them but if you're vegetarian like me you could easily leave them off.

Cranberry, Feta and Quinoa Stuffed Butternut Squash

How perfect would this be for a vegetarian Christmas meal? I love this recipe by Easy Peasy Foodie.
